
Tobias Schilk - Chef De Partie, Germany
When Chef De Partie Tobias Schilk met with me after a busy lunch in Maclab Bistro there was no sign of stress; just a big smile and calm presence. This composed attitude is something Tobias brings to work every day. “Knowing anything can happen, it’s important to stay calm and positive,” he tells me.
What is your background and what brought you to The Banff Centre?
Originally I did my apprenticeship in Germany. Having completed my training I knew I wanted to travel and see the world. First, I went to Australia and worked there as a cook. That’s where I met my Canadian girlfriend and we decided to come to Canada together. My girlfriend has a background in the arts. What better place to mix a career in the arts and cooking than at The Banff Centre? Originally coming to the Centre on a working visa, I’ve worked my way through the kitchen, first as a Demi Chef and now 4 years later, as a Chef De Partie. Having started in April 2007, with the help of sponsorship from The Banff Centre, I’m in the final stages of obtaining my permanent residency in Canada.
Describe what your role here at the Centre involves and what you enjoy the most.
Being a Chef de Partie means that I’m a section cook. I work in Maclab Bistro and make sure that the prep is done and that everything runs smoothly and safety. I interact mostly with Front of House and Back of House staff on a daily basis but if we have a buffet then I will be dealing directly with the customers and their requests. The part I enjoy the most about my job is cooking. No really - cooking! Whatever it is I’m making. I just enjoy working with food.
What is one highlight you’ve had working at The Banff Centre?
The Banff Centre has really opened up many possibilities for me to continue learning. An example was my opportunity to work with Chris Thompson in the 2009 and the 2010 Canadian Culinary Federation National Chefs Challenge. In 2009 we even came in 1st place.
I am so grateful to the Centre for the sponsorship and for these opportunities. My life has changed in a way I never expected being here and I’m very thankful for that.
When you’re not working, what do you like to do in your spare time?
I enjoy getting outside here in Banff; going hiking and biking. I even went rafting this summer. I think some of my favourite hiking has been time spent around Lake O’Hara - well so far anyways. I’ve also enjoyed different shows here at the Centre, in particular the Xavier Rudd concert. People went crazy when he came out. It was great.
Tell me something your colleagues might not know about you.
I guess most people wouldn’t know that I’ve been skydiving. It was an awesome experience. Free falling is amazing but once is enough!
